ARUGULA SALAD + LEMON DIJON VINAIGRETTE
I’m keeping it simple today with an Arugula Salad & Lemon Dijon Vinaigrette!

Even though it’s the middle of winter, I have been loving a fresh salad and salmon for dinner. This recipe is so quick and easy to make, and really yummy! And it will go great with any protein - chicken, steak, salmon, scallops - you name it.

Here is the recipe for my Arugula Salad & Lemon Dijon Vinaigrette!

Arugula Salad & Lemon Dijon Vinaigrette

Ingredients:
For the salad~
3 handfuls arugula
1 small shallot, sliced thin
For the dressing~
3 tbs fresh lemon juice
1/4 cup olive oil
1 clove garlic, crushed
1 1/2 tsp dijon mustard
1 1/2 tsp honey
Pinch of salt
Cracked pepper
Instructions
In a small jar, combine the ingredients for the dressing.
Whisk or shake for 30 seconds. Set aside.
In a large salad bowl, combine the ingredients for the salad.
Toss with the dressing until evenly coated.
Serve with your favorite protein and enjoy!
