Granola was something I never tried to make back in my pre-paleo days. It just looked super time consuming and not worth the effort. But THIS granola - my Blueberry Vanilla Granola - literally takes 10 minutes to make, and it is SO yummy (and guilt free!).

I use coconut flakes, coconut sugar, walnuts, dried blueberries, and vanilla - that’s it! But as always, feel free to experiment. One of the reasons I never wrote down my recipes in the past is because I never make the same recipe twice. For this recipe, I sometimes add chopped banana chips, cinnamon, pecans, chia seeds… whatever I have on hand. And it always turns out great!

Whether you sprinkle some on top of your yogurt in the morning, add some to a bowl with almond milk, or eat it plain, this is the perfect snack!

Blueberry Vanilla Granola {Grain-Free}

2 cups coconut flakes

1/2 cup coconut sugar

1/2 cup chopped walnuts (exclude for AIP)

1/2 cup dried blueberries

2 tsp vanilla


In a large bowl combine all of the ingredients.

Heat a large non-stick frying pan to medium heat.

Add the granola mixture, continuously shaking and tossing the mixture for about 10 minutes, or until the coconut flakes turn golden brown. If you leave the mixture in the hot pan without tossing it, the coconut sugar will melt together in clumps, instead of melting evenly across the mixture.

Remove from heat and pour out onto a plate to cool.

Break apart and enjoy!
