For dinner tonight we are making Burgers with Bacon & Avocado Aioli + Garlicky Japanese Sweet Potato Fries. YUM.

For years I had to cut out nightshades, so sweet potatoes quickly became my best friend. And I have to say, Japanese Sweet Potatoes are my absolute favorite. They are super sweet and so yummy. They also hold up really well so they are perfect for a nightshade-free french fry.

If this is the first time you have heard the word nightshade, you are probably not alone! Nightshades are tomatoes, potatoes, eggplants, hot and sweet peppers (and all of the spices derived from them). If you are just starting out on the AIP (Autoimmune Protocol), you probably know exactly what they are.. because they are hidden in a ton of packaged foods, they are pretty hard to avoid. While many people tolerate nightshades just fine, they can be inflammatory to others (which is why they are on the list to eliminate at first). Luckily - sweet potatoes are not nightshades (woo hoo!). So eat up!

This recipe is not totally nightshade-free, but feel free to take out the tomatoes and paprika to make it so.

Here is the recipe for my Burgers with Bacon & Avocado Aioli + Garlicky Japanese Sweet Potato Fries!

By Molly Bergseid

For the fries ~

4 small japanese sweet potatoes, cut into wedges

3 tbs olive oil

2 cloves garlic, crushed

1/2 tsp salt

Preheat the oven to 375 degrees.

In a large bowl, combine the sweet potato wedges, olive oil, crushed garlic, and salt until evenly coated. Let sit for 10 minutes to absorb some of the oil.

Place the sweet potato wedges on a baking sheet and bake for 10-15 minutes on each side, or until they turn lightly golden brown.

For the avocado aioli~

1 large avocado, skin and pit removed

4 tbs olive oil

1 small clove garlic

1 egg yolk

1 tbs lemon juice

1/4 tsp salt

1/2 tsp paprika

Place the avocado, olive oil, garlic, lemon juice, egg yolk, salt, and paprika in a blender and blend for 15 seconds.

Place in a sealed jar and set aside in the refrigerator.

For the burgers ~

1 lb ground beef

8 butter lettuce leaves

4 pieces of bacon, cut in half

4 slices red onion

4 slices tomato

Cook the bacon in a frying pan. Set aside.

Quarter the ground beef and form into patties.

On a hot grill, grill each side for 3-4 minutes.

Remove from heat and let rest for a couple minutes.

Assemble the burgers using the butter lettuce, burger patties, tomato, onion, avocado aioli, and bacon.

Serve with the Garlicky Japanese Sweet Potato Fries!
