Nothing says summer time like grilled shrimp tacos!

Tacos are one of my favorite things to make when entertaining. When I first started eating paleo, I was pretty much the odd one out. I was the only one who couldn’t eat grains, dairy, soy, nightshades, processed sugar, and so on. I quickly learned that tacos were a great option because it's easy to please everyone. I usually serve a variety of corn tortillas, cassava root tortillas, and romaine or butter lettuce for shells. And set out cheese, sour cream, and a variety of salsa. Then let everyone build their own. I will say, I'm always surprised at how many people think my diet is weird in theory, then end up building themself a paleo taco :)

Another thing that makes them great for entertaining is you can prep almost everything ahead of time. And shrimp takes no time to cook. That way you can spend time with your guests instead of being in the kitchen. Also.. who doesn’t love tacos?!

Grilled Shrimp Tacos with Mango Avocado Salsa

For the Tacos ~

1/2 lb shrimp, peeled and deveined

6 romaine lettuce leaves

1 tbs olive oil

1 tbs lime juice

1 tsp lime zest

1 tsp salt


Purple cabbage

For the salsa ~

1 avocado, diced

1 mango, diced (eliminate for Keto Wahls Protocol, use a bell pepper or tomato instead)

1 small clove garlic, minced

2 tsp red onion, diced

1 tbs cilantro, chopped

2 tsp olive oil

1 tbs lime juice

1 tsp salt

1/2 tsp paprika (eliminate for AIP)


For the Salsa ~

In a medium bowl, combine the avocado, mango, red onion, cilantro, olive oil, lime juice, salt, and paprika.

Set aside.

For the Tacos ~

In a medium bowl, toss the shrimp in the olive oil and salt.

Grill the shrimp for 30 seconds each side. Shrimp cooks really quickly and you don't want to over cook it, so once you see it turn pink, it's time to flip.

Remove from heat and sprinkle with lime juice and lime zest.

Assemble the tacos using the romaine leaves, grilled shrimp, salsa, purple cabbage, cilantro, and salt to taste.

Prep Time: 15 minutes

Cook Time: 5 minutes
