ICE CREAM SANDWICHES {Dairy Free, Grain Free}

It’s Memorial Day! And you know what that means - gardening, sunny days, and BBQs! This year I decided to make Ice Cream Sandwiches for our Memorial Day BBQ’s (we had 3 this weekend!). I haven’t had an Ice Cream Sandwich in forever, but oh my gosh, they are so good! Why do sprinkles make everything so much better?

Just because we eat paleo doesn’t mean we can’t have the fun sweets! Nowadays, there are so many diary-free ice cream options. I usually go for the coconut milk ones, but cashew milk ice cream and avocado ice cream are also really good. I swear, dairy free ice cream tastes no different than regular ice cream. Unfortunately, there are usually additives like guar gum or xanthan gum which are used as emulsifiers. But, IMO, if you eat ‘clean’ 95% of the time, it’s ok to have a little treat once in a while :)

These Ice Cream Sandwiches are so much fun and so easy to make!

Here is my super easy recipe for Ice Cream Sandwiches.


Ice Cream Sandwiches

Ingredients:

8 chocolate chip cookies (either homemade or store bought - my favorite brand is Simple Mills which are grain, dairy, and soy free)

1 pint vanilla ice cream

Sprinkles (I use Watkins, which are free of artificial dyes, gluten, and soy)


Instructions:

Put the cookies in the freezer for about 30 minutes.

Let the ice cream soften at room temperature for about 20 minutes, stirring occasionally to ensure the consistency is even.

Spread the ice cream on the bottom of 1 cookie, about 1.5 inches thick. Then put the other cookie on top, filling in the gaps with ice cream.

Roll the edges in sprinkles.

Immediately put the Ice Cream Sandwich in the freezer until you are ready to eat.
