PALEO CHOCOLATE CHIP COOKIES

Everyone needs a good recipe for Chocolate Chip Cookies.
I created this chocolate chip cookie recipe about 5 years ago when everything in my life (or rather, kitchen) turned to coconut. Coconut butter, coconut milk, coconut flour, coconut oil, coconut flakes, coconut ice cream, coconut chips… I quickly realized that you can substitute coconut in just about any recipe (which worked out well for me because dairy is not my friend).
These days, when I make cookies, I make a batch for me (this recipe), and a double batch for Stephen (a different recipe that uses almond flour and ghee), and he STILL ends up eating some of mine!
These CCC’s are SO yummy. You will especially love them if you like soft & chewy cookies. They would be perfect in an Ice Cream Sandwich!
Here is the recipe for my Paleo Chocolate Chip Cookies:
Paleo Chocolate Chip Cookies

1/2 cup coconut butter, warmed up
1/3 cup maple syrup
1 tsp vanilla
1/2 cup coconut flour
1/2 cup cassava flour
1/2 tsp baking soda
1/2 tsp cream of tartar
1/2 tsp salt
1/2 cup soy-free chocolate chips
Preheat the oven to 350 degrees.
In a medium bowl, whisk together the coconut butter, eggs, maple syrup, and vanilla.
Sift in the coconut flour, cassava flour, baking soda, cream of tartar, and salt. Add in the chocolate chips and mix until just combined.
Form 2 inch balls and place evenly on a baking sheet.
Using the bottom of a large glass, press down on the balls to flatten them out so they are about 1/2 inch thick.
Cook for 15 minutes or until the edges start to turn brown.
