Happy September! I cannot believe how quickly this summer flew by. I will say, I absolutely love living in Colorado because we truly get to experience all 4 seasons (maybe that’s why I never left!). So, as we move into the busy fall season, I have the perfect recipe for you!

These energy balls are so yummy to snack on, and are packed with protein. They are made with almond butter, hemp seeds, chia seeds, collagen peptides, raw honey, and chocolate chips - pretty clean ingredients if you ask me! And, they literally take all of 10 minutes to make.

And as I always say.. you can pretty much do whatever you want with these. If you prefer and tolerate peanut butter, go for it. Or you can add dried cranberries, shredded coconut, more nuts and seeds, you name it!

Here is the recipe for my Paleo Energy Balls!

Paleo Energy Balls

14 oz unsalted almond butter

1/3 cup raw honey

1 tsp vanilla

1/2 cup mini semi-sweet chocolate chips (I use Enjoy Life brand because they are soy-free)

1/3 cup hemp seeds

1/2 cup chia seeds

1/2 cup coconut flour

2 tbs collagen peptides

1/4 tsp salt


In a medium bowl, combine all ingredients.

Let sit for 15 minutes while the moisture absorbs.

Form 1.5-2 inch balls.

Store in the refrigerator.
